Method :
In a pot heat up oil and fry sliced shallots, lemon grass and ginger until brown.
Dish out half of the fried ingredients for garnishing.
To the reminder add prawns, squid, turmeric, pineapple and rice. Mix well.
Add pineapple juice and enough water so it stands 2 cm or 1 inch above rice. Add pandan leaves.
Cook till all the water is absorbed.
Fluff up rice with a fork and simmer covered for 5 minutes.
Garnish with fried onion and lemon grass. Serve hot.
