Healthy and delicious, this is an ideal one-dish meal for the family.
Serves : 4-6
Ingredients :
2 packets fresh kway teow, blanched 200g pork fillet
1 garlic clove
6 cups chicken stock
2 tbsp oil
12-15 prawns
Bean sprouts, blanched
1/2 cup coriander leaves , chopped
2 stalks lemongrass , chopped
4 kaffir lime leaves , sliced fine
1 teaspoon sugar
Fish sauce , salt and pepper , to taste

Method :
- Heat oil, saute garlic and add pork. Stir-fry until meat is cooked. Set aside.
- In a stockpot, bring chicken stock to a boil. Add prawns, and remove when cooked. Shell and put aside
- Add coriander, bean sprouts, lemongrass, lime leaves and seasonings to the stock and bring to boil. Add kway teow and heat though.
- Put individual portions of kway teow, prawns and pork in bowls and pour the soup over.
- Garnish with chilli flakes, spring onions and lime wedge. Serve hot.
TIP:
Add a tom yam stock cube to the broth to make it more fragrant.
