Seasoning for Food Dash of miso, mirrin (Japanese rice wine) and sugar
Yellow Mashed Vegetable 1 Potato, Peeled
1/2 carrot, 1/4 teaspoon salt Red Mashed vegetable 1 red capsicum, removed seeds, diced
1/2 onion, peeled, diced
2 pips garlic, peeled, chopped
1 red chili, removed seed, sliced
2 tomatoes, 1/4 teaspoon salt
For garnishing Belacan sambal, Japanese cucumber and onion shreds
Method :
Yellow mashed vegetable: Boil potato and carrot until soft. Remove, add in salt and mash till fine.
Red mashed vegetable: Heat up oil and sauté garlic until fragrant. Add in capsicum, onion and chilli and stir well. Add in tomato, salt and water. Cook over low heat for 30 minutes or until all ingredients are tender. Remove and put into blender and blend till smooth. Strain.

Mix cod with seasoning and marinate for 20minutes. Drain and bake in preheated oven at 200ºC for 20 minutes or until cooked.
Place salmon and con on top of mashed vegetable. Serve with sambal, cucumber and onion.
