Ingredients :
450g squid, small or medium-sized
3 tablespoons tamarind pulp, mixed with 625ml water and strained
1.25cm square dried shrimp paste (belacan)
1 dessertspoon sugar
1 teaspoon salt
3 pieces dried sour fruit (asam gelugur)
12 shallots, peeled and sliced
2 stalks lemon grass, crushed
4 red chillies, split leghtwise, stems retained
4 green chillies, split lenghtwise,stems retained

Method :
- Wash and remove ink sac from squid. Set aside.
- Put tamarind juice, dried shrimp paste, sugar, salt, tamarind skin, shallots and lemon grass into a pot.
- Bring to the boil then add red and green chillies. Simmer gently for 10 minutes.
- Add squid and boil for 3-4 minutes until just cooked. Serve hot.
