Ingredients :
30ml olive oil
1 small onion, chopped finely
1 stalk leek, sliced
3 rashers smoked beef bacon, diced (rinsed briefly in cold water to get rid of excess salt)
160ml white wine (optional)
120ml cream (buy from supermarket)
salt and pepepr to season
1kg white clams, thoroughly rinsed and cleaned

Method :
- Heat olive oil in pan over a medium fire. When hot, stir-fry onion, leek and beef bacon for 20 seconds.
- Cook, covering the pan with a lid, for another 2 to 3 minutes until the mixture is soft.
- Add wine, if using, cream and salt and pepper to taste. Bring to a boil. Add clams, mix well and cook, covered, for 5 minutes, or until the clams open. Serve immediately.
Tips : Before cooking, soak the clams in enough water to cover for at least 30 minutes. They will spew out sand, leaving you with less gritty clams when cooked.
