French Beans in Coconut Milk |

Ingredients :
500g French beans
2 tablespoons cooking oil
2 clove garlic, peeled and chopped
2 stalks lemon grass, bruised and cut into four pieces
225g small prawns (shrimps), shelled and deveined
2.5cm galangal, peeled and sliced
1/2 teaspoon powdered turmeric
2 kaffir lime leaves + extra for garnishing
2 tablespoons fish sauce (nam pla)
1 teaspoon sugar
1/2 portion thick coconut milk
1 red chilli, seeded and chopped

Method :
- Top, tail, string and halve the French beans.
- Heat the cooking oil and fry the garlic, lemon grass, prawns (shrimps), galangal and powdered turmeric for 5 minutes.
- Add the French beans, kaffir lime leaves, fish sauce and sugar. Cook for another 3 minutes, stirring constantly to prevent the milk from curdling.
- Serve garnished with red chilli and kaffir lime leaves.
Chef's note : French beans can be substituted with long beans or mange tout (snow) peas.
