Ingredients :
210g small prawns (shrimps)
juice of 6-7 limes
125g shallots, peeled and finely sliced
60g coriander leaves (cilantro), chopped
4 cloves garlic, peeled and chopped
85ml fish sauce
3 stalks Chinese chives, cut into 0.5cm lengths
10 bird's eye chillies, finely sliced
70g sugar
500g bean sprouts, tailed, blanched and drained
5cm dried shrimp paste, toasted and coarseley ground
800g rice vermicelli, blanched and drained
2 red chillies, cut into thin rounds

Method :
- Blanch the prawns (shrimps) in hot water. Shell, devein and halve lengthways.
- Combine prawns (shrimps) with lime juice, shallots, coriander leaves (cilantro), garlic, fish sauce, Chinese chives, chillies, sugar and bean sprouts. Mix well.
- Add the shrimp paste and rice vermicelli. Toss the mixture until well blended.
- Garnish with red chillies.
