Ingredients :
500g unripe papaya, peeled and finely shredded
1 tabelspoon tamarind juice, extracted from 1 teaspoon tamarind pulp and 1 tablespoon water
3 tablespoons crushed palm sugar ( jaggery ) or brown sugar
2 tablespoons lemon juice
3 tablespoon fish sauce ( nam pla )
80g dried prawns ( shrimps ), soaked in hot water, drained and coarsely pounded
5 kalamansi, cut into small cubes
100g cabbage, sliced
100g long beans, cut into 5-cm / 2 inch lengths
100g lettuce, torn into pieces
100g sweet basil leaves
5-6 cherry tomatoes
Coarsely Pounded Paste
2 small tomatoes, quatered
6 cloves garlic, peeled
4 bird's eye chillies
6 white peppercorns
85g roasted peanuts |
Method :
- Gently crush the papaya in a mortar with a pestle and set aside.
- Combine the tamarind juice, palm sugar ( jaggery ) or brown sugar, lemon juice and fish sauce. Add the coarsely pounded paste and mix well.
- Add the crushed papaya, dried prawns ( shrimps ) and kalamansi cubes and toss well.
- Serve with a mixture of cabbage, long beans, lettuce, sweet basil leaves and cherry tomatoes.
