Bean Sprouts and Tau Kwa

4 pieces (600g) tau kwa
400g bean sprouts
5 stalks spring onion
2 chillies
30g salted vegetables
100g shrimps
1 teaspoon minced garlic
50ml stock
Seasonings :
a little soy sauce
a little pepper
Method :
Soak tau kwa in salted water then cut into long thin slices. Rinse bean sprouts and remove the roots. Cut spring onion into sections and chilies into thick shreds. Soak salted vegetables and cut into shreds. Shell shrimps, but keep the tails on.
Heat 6 tablespoons of oil and pan-fry tau kwa till golden brown. Remove and place on a plate.
Using 2 tablespoons of oil, fry garlic till fragrant, add salted vegetables and fry briefly. Stir in shrimps and bean sprouts and fry briskly for a while. Add chillies and fry well. Pour in stock and bring to a boil. Add light soy sauce and spring onion to fry briefly.
Lay stir-fried bean sprouts on the tau kwa. Add pepper and serve.
Notes : Soaking tau kwa in salted water prevents it from sticking onto the pan during frying later on.
