Hot Plate Tofu

Cut each roll of tofu into 6 pieces. Soak mushrooms to soften then cut off stems. Chop mushrooms, spring onion and chilli.
Heat 1 cup of oil and deep-fry tofu till golden brown. Remove and drain oil.
Using 1 tablespoon of oil, fry minced garlic and the white portions of spring onion till fragrant. Add mushrooms, chilli and minced meat to fry well. Stir in Seasonings then thicken with potato starch water. Turn off the heat when the ingredients are cooked through.
Heat a hot plate and pour in 1 tablespoon of oil. Beat the egg and pour it evenly on the hot plate. Lay tofu and mushrooms mixture on top then scatter the chopped spring onion before serving.
