Ma-Po Tofu

1 tablespoon spicy bean paste 1/2 cup stock
a little dark soy sauce 1/2 teaspoon wine
2 teaspoon sugar
1 tablespoon potato starch (mixed with a little water)
a little Sichuan pepper 1/2 teaspoon sesame oil
Method :
Cut tofu into small pieces.
Heat 2 tablespoons of oil and fry minced ginger and garlic till fragrant. Add minced meat and fry briefly. Stir in spicy bean paste and mix well.
Add tofu and stir well before adding stock, dark soy sauce, wine and sugar to mix well. Thicken with potato starch water. Lastly, add Sichuan pepper, chopped spring onion and sesame oil.
