1 tablespoon corn flour
4 tablespoons plain flour
1 egg yolk
a little water
Method :
Mash tau kwa. Shell shrimps and remove the veins. Rinse, pat dry and mince well. Combine mashed tau kwa and shrimps with pepper, salt, corn flour and egg white into a paste.
Smear 10 soup spoons with oil and fill with tau kwa mixture. Steam over medium heat for about 8 minutes. Scoop out the filling and coat with batter mixture.
Heat halt a pot of oil and deep-fry tau kwa till golden brown. Drain oil.
Add a little salt to the stock and bring to a boil. Thicken with potato starch mixture and drizzle the gravy onto the deep-fried tau kwa. Scatter deiced ham on top before serving.
