Stir-fried Chinese Chives with
Tau Kwa

Cut each piece of tau kwa into 4 pieces. Trim away tough parts of the chives then cut into sections. Slice pork and marinate with light soy sauce and potato starch. Shell prawns and remove the veins. Scald with boiling water then remove. Slice carrot.
Heat 4 cups of oil and deep-fry tau kwa till golden brown. Drain oil.
Scald pork with 2 tablespoons of oil. Remove then add garlic to fry till fragrant. Add carrots and chives to fry briefly. Stir in pork and oyster sauce before adding stock and tau kwa. Cover and simmer for 3 minutes.
Once flavourful, add prawns to fry briefly. Thicken with a little potato starch water and turn off the heat.
