Stuffed Mushrooms

60g chicken breast meat
60g shrimps
1 stalk spring onion
1 piece (150g) soft tau kwa
8 mushrooms
Seasonings :
1 teaspoon salt
2 tablespoons potato starch
1 tablespoon corn flour 1/3 teaspoon bonito powder 1/2 egg
125ml stock
11/2 oyster sauce
a little sesame oil
Method :
Chop chicken meat, shrimps and spring onion. Mix them with mashed tau kwa, salt, potato starch, corn flour, bonito powder and egg.
Remove stems from mushrooms and soak in hot water. Pat dry and dust a little flour on the insides of the mushrooms. Fill them with the mashed tau kwa mixture.
Heat 4 tablespoons of oil and fry stuffed mushrooms till golden brown. Remove.
Boil stock and oyster sauce. Then add a little potato starch water and sesame oil. Pour gravy on the fried stuffed mushrooms.
Notes : If bonito powder is not available, you may also use bonito flakes. Toast them before pounding into powder.
