Melt butter over low heat. Sauté crushed garlic until fragrant. Add seasoning. Stir fry to form sauce.
Scale goby. Cut open at the back. Remove gut. Wash and wipe dry.
Wrap the plate with aluminium foil. Brush with oil. Place goby on aluminium foil (with fish skin facing down). Brush fish with sauce.
Pre-heat oven at 250°C (No.7). Place fish at the upper rack. Bake for 12 to 15 minutes. Pour spring onion with oil, deep fried shallot and crushed peanut on top when serve.
