Hanoi-Style Fried Fish
Serves 4
Ingredients
Salt and pepper
¼ cup peanut oil
4 teaspoons turmeric, grated
1 heaped teaspoon ginger, grated
4 spring onions, chopped
½ cup fresh dill, chopped
2 tablespoons crushed peanuts
Dipping Sauce
2 tablespoons shrimp paste with soya bean oil
¼ cup fish sauce
1 tablespoon sugar
500g boneless fish fillets
To Garnish
Lettuce and mint leaves
Method for Cooking Hanoi-Style Fried Fish:
Prepare dipping sauce by mixing shrimp paste, a little extra oil, fish sauce and sugar. Boil and add more sugar if desired.
Season fish with salt and pepper and cut into 2½ cm pieces. In a heavy-based pan, heat oil, then add fish, turmeric and ginger. Turn gently and just before fish is done, add spring onions, dill and peanuts. Serve with dipping sauce, lettuce and mint on a bed of rice.
