Combine together pepper, salt, sugar and 4 teaspoons of oil. Rub duck inside and out and seal flavours inside by securing the opening with a bamboo skewer. Preheat oven to 190°C.
Mix honey, soy sauce, lime or lemon juice, remaining 2 teaspoons of oil and optional saffron or turmeric used for its colour rather than flavour. Pour over duck, ensuring it reaches the whole surface (a must). Place duck in oven and baste every 20 minutes until golden and cooked through (about 2 hours).
