Yellow Eel in Black Pepper

 

Ingredients

  • 600g yellow eel
  • 1 Chinese celery (sectioned)
  • 2 tablespoons carrot shreds
  • 1 teaspoon crushed garlic
  • ½ teaspoon grated black pepper
  • ½ tablespoon butter
  • 2 teaspoons wine

Marinade

  • ½ tablespoon wine
  • 1 teaspoon ginger sauce
  • 1/3 teaspoon salt
  • A pinch of sesame oil
  • A pinch of pepper
  • ½ egg white
  • 2 teaspoons caltrop starch (add before scalding)
 

Method for Cooking Yellow Eel in Black Pepper:

  1. Cut open yellow eel. Debone, gut and trim. Wash and put into boiling water to scald. Then rinse. Wipe dry. Cut into rectangles of 2 inches. Add in marinade ingredients. marinate for 15 minutes. Scald in oil.

  2. Heat 1 tablespoon of oil. Add butter, crushed garlic and black pepper. Return yellow eel. Sizzle wine. Put in carrot shreds and Chinese celery sections. Stir well. dish up.
